Kitchen Exhaust Hoods
As the world becomes closer connected, different cultures are becoming a greater influence on our daily lives. Nowhere is this change being seen more than in the food & cooking industry. The range & choice of cuisine has nearly tripled over the last two decades. This explosive change comes with its own challenges & hurdles to overcome, one of which is dealing with the cooking fumes & exhaust odour of the various foods.

This is where Cavalier Ventilation can help. Our experienced team have designed & installed thousands of exhaust hood systems of all shapes, sizes & styles and are looking forward to helping you with yours.
The Design Process
To ensure that we can provide the best service possible, one of our sales team will acquire all required information of your cooking layout as no two kitchens are the same. This involves collecting any layout drawings showing the cooking equipment and/or a site visit where they will measure the location of the exhaust hood noting any obstructions & obstacles.
This information is then relayed to one of our draftsmen who will design your project with site specific designs & installation drawings showing the complete package. Here at Cavalier, we like to take a holistic approach to all our ventilation systems. All our hoods are design to The Australian Standard AS1668.2:2024.
The Fabrication Process
Once you have approved your exhaust hood system, the designs are then processed to our manufacturing floor where we use the latest in CAD software & machinery to ensure that you hoods are fabricated within a 2-week lead time from approval. All hoods are constructed from a variety of materials ranging from galvanised steel to 316 stainless. Our exhaust hoods are welded with no bolts or rivets visible from the exterior providing the best finish. This makes our hoods one the most visually appealing hoods out there today. We fabricate every component for your system in-house including all ducting, covers & infills.
Delivery & Installation
Once fabricated, we will work within your schedule to deliver or install the exhaust hood & system. We are extremely flexible and can work to any & all site restrictions as our team have installed hoods on many job sites encountering & overcoming all kinds of scenarios.
Importance of Maintenance
All our exhaust hoods are labelled with a maintenance schedule specific to the type of hood that has been supplied/installed. By regularly maintaining & cleaning your exhaust hood & system ensures that it will last & be safe to operate. It is recommended that the grease pots supplied are emptied daily & the filters are cleaned according to your specific maintenance schedule. However, it is best practice to have a qualified cleaning company servicing your equipment as they will modify the schedule to suit your cooking requirements.
Note: Grease is flammable & if ignited will spread throughout the exhaust system due to airflow.
Warranty
Warranty
Cavalier’s Exhaust hoods have a Lifetime warranty (25yrs). This is conditional & could be void if the maintenance schedule is not followed. Modifying the hood will also void the warranty as the function of the hood it is no longer in our control & will impact the original design. Componentry of our exhaust hoods have a 12-month replacement warranty. These items include lights, injection fans, grease pots and filters. If you have a warranty claim, please contact our team.

Steam Hoods
Cavalier’s Steam Hoods are for the capture & treatment of exhaust fume that contains no grease. Primarily used above dishwashers or washing equipment, pizza & combi-ovens, the hood uses a larger footprint to capture, treat & remove the volume of steam that is produced. All steam hoods are made from stainless steel & feature a drain that can be released manually or connected to a trade waste system.

Residential Hoods
Residential Hoods are designed & fabricated with a homely feel to make your cooking or entertaining areas really standout while still being functional & compliant. These can be installed internally in your kitchen or externally with your outside entertainment. All our Residential Hoods are of a custom design that is controlled by you to ensure that you are 100% happy with your product.

Classic Hood
The Classic Hoods range are our most often used hoods as they are compact & can treat most fumes from your cooking (Not solid fuel cooking). The grease filters remove a large percentage of grease & pollutants which is then drained into catchment pots for ease of disposal. The filters themselves are removable & can be replaced with clean filters to ensure minimal down time for your kitchen.

Energy Efficient Hood
Cavalier’s Energy Efficient Hoods are our most versatile hoods. With a larger containment volume than or Classic Hoods, the Energy Efficient range captures & contains the fumes for longer thus treating the fumes more effectively. Like the Classic range it also has removable grease filters for an easier clean, however with our ‘Flame Guard’ or ‘Mist’ variants it can also treat solid fuel cooking.

Exhaust Hood
Exhaust Hood Options
Lights
LED downlights are used all our exhaust hoods (excluding dishwasher ‘Steam Hoods’). The lights are spaced at approximately 1m apart & have 5 brightness options. Alternatively large fluorescent lights behind toughened glass could be used.
Supply Air
Due to the large volumes of air the hoods displace from your kitchen area, a make up air supply is sometimes required to maintain a comfortable ambient air pressure. This will be advised to you by the estimator during the quoting process. As this air is usually supplied from an external source, if conditioned it will help to cool the cooking area & chefs.
Air Injection
Air Injection is a feature added to the exhaust hood to provide an air curtain at the front of the hood. This helps to contain the fumes to the cooking area as they are being treated & extracted.
Flame Guard
A Flame Guarded Hood is a variant of the Energy Efficient Hood that is designed to accommodate solid fuel cooking. Large removable panels protect the grease filters from direct exposure to the cooking fuels minimising the risk of the extracted grease igniting. The Flame Guard option is something that must be worked into the initial design of the exhaust hood, it is not something that can be added to existing Energy Efficient Hoods.

Mist
Cavaliers Mist range hood is predominantly used with the introduction of solid fuel type cooking (charcoal/timber). In front of the filters, we have a flame guard panel which is easily removable for maintenance and helps increase the distance between the cooking surface and any grease arresting devices (open flame = 1350mm). Behind this we have a configuration of stainless steel piping that douses the embers with a fine mist before entering our final stage of treatment, the stainless steel baffle filters.
The fine mist extinguishers live and hot embers, whilst also reducing the air temps to increase the longevity of your mechanical equipment (Electrostatic precipitators fans, etc)
The water feed is connected through a solenoid which is interlocked with your kitchen exhaust fan (when fan turns on, the mist automatically turns on).

Low Back
A Low Back Hood is, as its name suggests, an exhaust hood where the back sits lower than its front. This is a variant of all our other hood types and is predominantly used in very low ceiling situations. The front is set to an Australian Standard height of between 2000-2100mm above the floor whereas the back is lowered to maintain a larger capture area, correct angles & filter size.

Dual Bank
Cavalier’s Dual Bank Hood is regularly used in island type layouts in order to achieve compliant overhangs. Open layouts where no full height walls are implemented require an increase in airflow and overhangs. By adding the extra internal filter bank, this helps introduce more filters to still achieve the correct velocity and angles.
